Raspberry-Balsamic Chicken by CookingLow-Fat.com

1 tsp. vegetable oil
1/2 c. red onion, chopped
1 1/2 tsp. fresh or 1/2 tsp. dried thyme, minced
1/2 tsp. salt, divided in half
4 chicken breasts, skin and bones removed
1/3 c. raspberry preserves, seedless (or any flavor desired)
2 T. balsamic vinegar
1/2 tsp. fresh ground black pepper


* In a large skillet or saucepan, saute onion in hot oil for 5 minutes over medium-high heat.

* Sprinkle 1/4 tsp. of the salt and all of the thyme over the chicken and add to pan. Cook for 5-6 minutes on each side or until done.

* Remove chicken from pan and keep warm.

* Reduce heat to medium. Add remaining salt, raspberry preserves, vinegar and pepper to pan. Stir constantly until preserves are blended in and melted.

* Drizzle sauce over chicken and serve immediately.


Served with these red potatoes & garlicky asparagus. YUM!!!

Hawaiian Haystacks

6 cups cooked rice (we prefer brown)
2 cans cream of chicken soup mixed with one can milk (to make a gravy consistency)
Crushed pineapple
Chopped green bell pepper
Chopped tomato
Shredded cheddar cheese
Sliced black olives
Crunchy chow mein noodles
Optional:
Shredded coconut
Sliced almonds
Chopped green onion

Put about 1 cup of rice on a plate- top with pineapple, bell pepper, tomato, cheese, & olives. Cover with gravy- finish with chow mein noodles.

It is also called "Chinese Sundaes"- great meal cuz everyone can build it the way they like it!

Fabulous-o Frittata

8 oz. sausage, any kind, cooked (I have used crumbled, sliced, breakfast, Italian, gourmet, etc.)
1 cup shredded zucchini or summer squash
1/2 cup chopped green onion
4 eggs
1/3 cup milk
1 tsp. Italian seasoning or Herbs de Provence (or your favorite blend of spices)
1 1/2 cups shredded cheese
2-4 oz. cream cheese (it is also yummy with a soft goat cheese here as well...)

Preheat your oven to 350. Grease a glass pie plate and scatter the sausage evenly on the bottom of the pan. Top the sausage evenly with the shredded zucchini, then the green onions. Beat the eggs and milk together and pour over the mixture in the pie pan. Top with Italian Seasoning and shredded cheeses. Take small bits of the cream cheese and put all over the top of the mixture, like little polka dots.

Bake for 35 min, or until eggs are set and cheese is brown. Let stand for about 5 min before digging in!

This feeds our family with occasional leftovers!

Also, I have made this recipe with bacon instead of sausage, then put diced leftover red potatoes (cooked, of course) and asparagus. I kept everything else the same, just made a couple of additions and it turned out wonderful!

Happy Father's Day!


So, here's some background- I missed 2 phone calls from my handsome man. I know- not good.
When I realized that I had missed the 2nd phone call, I kinda went a little overboard and booked a room for Father's Day weekend so we could see Michael at church on Sunday. So, without my husband expecting us, we showed up and saw him for 2 hours! (I had tried to warn him, he said not to come, and then said it was up to me- he didn't think I was going to do it...)

He is doing great- tan and handsome, kind and wonderful- same old Michael, just stronger and more lean. Blake commemorated the happy event by puking on his daddy (whoops) and Riley was the same crazy, precocious kid we love (just makes us want to pull our hair out).


It was nice to talk for a couple of hours- just the infusion our little family needed for the couple of months ahead before graduation!

Love you, my soldier man! Happy Father's Day- you are the BEST dad- you love your kids, and you love their mom!


Also, a Happy Father's Day to my Papa! He is the best- he loves his family, is there when I need to talk, and always has a down-to-earth perspective. His desire to do what's right and treat others with courtesy and respect is truly an example I am grateful for. I love you, Papa! Thanks for being a great dad to this crazy bunch of kids!

Michael the Soldier


Michael has finally made it to Basic training at Fort Leonard Wood, Missouri. He is alive, and as well as can be imagined- he is keeping his chin up and doing his best to keep his Drill Sergeant off his back.

He said one of the young recruits was giving him a hard time about being the old man- he told Michael "You're 32? What was it like when the dinosaurs were roaming the earth?", to which Michael replied, "I don't know, what is it like to wear diapers?" It's obvious to see that he hasn't lost his quick wit and good sense of humor.

Moving Across the Country!

So, Michael and I had a few hard decisions to make with his upcoming departure for Army training. Do we (me and the three boys) stay in Arizona while he is off for 15 months- or do we opt for a little adventure almost 2,000 miles away? Hmmmm....

Since we have had so many changes in the past year, why not add one more! So right before Christmas, we loaded some belongings in our vehicles, kissed family and friends good-bye, and headed out for Southern Indiana.


Our really good friends, Kyle & Denielle had been bugging us to move out their way ever since they left AZ- so the timing was good. They have an amazing house with room enough for 2 families and their hearts are even bigger. (This picture is from a previous visit to Louisville, KY)

We left Arizona on the Monday before Christmas and headed through El Paso, making a stop for the night in Midland, TX. We didn't get to our hotel until 5 AM their time- and they had cancelled our reservation, thinking we were a no show. BUT it was easily fixed and we had a good night's rest (or good morning's rest, I guess). Then we headed out and drove for another 15 hours or so to Memphis, TN to stay on a Naval Activity Station. We slept as long as we could before checking out and making the last 6 hour leg of our journey to Southern Indiana (just outside Louisville, KY).

We got to Indiana on Christmas Eve, and had to unpack the trailer to get out the presents for the next morning (not one of my best packing maneuvers... oops). It was really exhausting, but the trip went so smoothly, we knew angels were riding with us. It was a blessing to make a safe trip, and it has definitely been a blessing to be in this part of the country!

Hawaii! (without proof...)

There was some down-sizing at United in Phoenix, and I went ahead and took the option of leaving without having to quit. One of the great perks of this arrangement is I get to retain my travel benefits for 90 days. Hooray!

Michael and I had been hoping for an opportunity to go to Hawaii at some point during my time at United. This seemed like the perfect time!

We packed the kids up and took off for the airport on Saturday afternoon, and hopped a plane to San Francisco. We didn't have much time between flights, and had everyone's toes and fingers crossed that we could get on the flight to Honolulu that night- and we did!

We got into Honolulu about 10:30 PM- made our way to Hickam AFB to stay in the lodging there. Our room was very comfortable, and we had no problem getting around.

On Sunday morning, we found an LDS building not too far from us, and went to the ward in the morning. The meeting was really nice, and everyone was very friendly.

We weren't too far from the Pearl Harbor Memorial, so we took the kids there to see what we could find. There was a wait for the tour, so we just perused the grounds and enjoyed the beautiful Hawaiian scenery.

We decided to make our way to the North Shore for some big waves. Little did we know that the waves were HUGE! A little too huge for me, in fact. I stayed up on the beach with Blake (who wasn't too sure about the sand) while Colton and Riley outran the tide. Michael decided that the waves weren't that intimidating, so he went down to try and body surf. He basically just got tossed around!

When Michael got tired of getting beat up by the ocean, we decided to continue our drive around the island. We drove past the Honolulu Temple and BYU Hawaii. It was really great to see-- wish I had looked at that for college... :)

About 45 minutes outside of Honolulu, we found a local beach that had calm water and no crowds, so we got out and the boys were able to play in the water. Blake had ZERO interest in the beach and the ocean- and just kept making this whining noise that sounded like an ambulance (the "whambulance" noise...) Poor guy!

After all that fun, we finally made our way back to the hotel so we could be prepared to leave the next night.

Monday was a busy day- not only did we still want to sightsee- but we had to be at the airport looking decent for a redeye flight to San Francisco.

After we had all our stuff together and got some souvenirs on base, we went to Waikiki so Michael could see where the tourists hang out. It was nice, but very crowded. When we go again, that is where we will probably hang out. The beaches were much better suited for families, and there are plenty of restaurants and shops nearby.

We ended up getting caught in a little rainstorm, and decided to drive to a different part of the island that we missed on Sunday.

I think that is where our camera is, sadly. That is why there are no photos of our wonderful little vacation (sniff, sniff).

But- we made our flight that night. And everyone made it home safe. We were even able to get some rest in San Francisco after our long flight back to the mainland.

It was an amazing trip- even if it only lasted 2 days. We have some great memories, and love that we were able to do the whole trip on a shoestring budget!
